Roasted Sweet Potato

Healthy Eats: This week we are featuring Sweet Potatoes (aka Yams)!

Sweet potatoes are a Superfood, especially for diabetics, says the American Diabetes Association. They have been shown to stabilise blood-sugar levels by lowering insulin resistance and they contain a high amount of fibre, which also helps to reduce levels of "bad" LDL cholesterol in the body.

Roasted Sweet Potatoes:

  • Sweet Potatoes
  • Salt
  • Pepper
  • Olive Oil

Preheat oven to 425 degrees F (220 degrees C). Slice sweet potatoes into wedges. Drizzle olive oil, sprinkle salt and pepper to taste over the mixture and toss to coat; pour into a shallow roasting pan. Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes.
