Sweet Potato Chili
Ingredients:
- 2 cups diced sweet potatoes

- 1 lb ground chorizo sausage
- 1 medium onion diced

- 1 avocado
- salt and pepper to taste
Instructions:
- Cook your bacon until crispy. Crumble the bacon , and set aside for later use. Do not clean the skillet.
- In the same skillet, heated to medium, add diced sweet potatoes, salt and pepper to taste, stir until coated and cover. Cook for about 8 minutes stirring occasionally to brown evenly until soft.
- Add the diced onions and cook until soft, stirring.
- Add the chorizo to the skillet. Cook and stir over medium heat until nicely browned.
- Once the chorizo and sweet potatoes are browned, add the crushed tomatoes, tomato sauce, and all the spices and stir to combine flavors.
- Continue to cook and stir over medium heat until it comes to a low boil, then lower the heat and simmer for 5 minutes.
- Once ready to serve, add the bacon to the chili and garnish with sliced chives and avocado slices.
