Sweet Potato Chili

Wild West Spice Blend

Ingredients:

  • 2 cups diced sweet potatoes

  • 2 tbsp bacon fat, etc.
  • 6 slices bacon cooked and drained (save the fat)
  • 1 lb ground chorizo sausage
  • 1 medium onion diced
  • 14.5 oz can Fire Roasted Crushed Tomatoes
  • 1/2 of a 15 oz can tomato sauce
  • 1 bunch chopped chives
  • 1 avocado
  • salt and pepper to taste

Instructions:

  1. Cook your bacon until crispy. Crumble the bacon , and set aside for later use. Do not clean the skillet.
  2. In the same skillet, heated to medium, add diced sweet potatoes, salt and pepper to taste, stir until coated and cover. Cook for about 8 minutes stirring occasionally to brown evenly until soft.
  3. Add the diced onions and cook until soft, stirring.
  4. Add the chorizo to the skillet. Cook and stir over medium heat until nicely browned.
  5. Once the chorizo and sweet potatoes are browned, add the crushed tomatoes, tomato sauce, and all the spices and stir to combine flavors.
  6. Continue to cook and stir over medium heat until it comes to a low boil, then lower the heat and simmer for 5 minutes.
  7. Once ready to serve, add the bacon to the chili and garnish with sliced chives and avocado slices.
  8. Enjoy!
