​The Role of Tea in Fighting Dementia

Recently researchers from the National University of Singapore suggest drinking a cup of tea daily can improve brain health later in life, and even reduce the risk of dementia. The findings revealed regular tea drinkers who drank at least one cup, and up to three or more cups a day, yielded the most brain health benefits. The flavonoids in the tea leaves have anti-inflammatory and antioxidant properties that prevent vascular damage in the brain. Potentially regularly consuming green or black tea reduces the risk of cognitive decline by 50 percent, and as much as 86 percent in adults who carry the APOE e4 gene for developing Alzheimer's disease.

These long-term benefits of green or black tea were attributed to the bioactive compounds in the leaves:

Udon Soup

Healthy Eats:

Udon Noodle Soup With Soft Egg

Japanese 7 Spice BlendIngredients:

  • 2 teaspoons extra-virgin olive oil
  • 1/2 yellow onion, diced
  • 1 clove garlic, minced
  • 2 Tbsp Renovation Tea: Japanese 7 Spice Blend
  • 4 ounces ground pork
  • salt and pepper to taste
  • 6 cups chicken broth
  • 1 tablespoon fish sauce
  • 1/2 to 1 teaspoon sriracha sauce to taste
  • 12 ounces cooked udon noodles
  • 3 large handfuls roughly chopped, stemmed chard
  • 2 to 3 eggs
  • 2 scallions white and light green parts, thinly sliced for garnish

Instructions:

  1. Set a medium pot over medium heat and add the olive oil
  2. Add the onion and saute until translucent and tender.
  3. Add the garlic, Japanese 7 Spice Blend, salt and pepper (to taste) and pork and cook, stirring regularly, breaking up the pork into crumbly pieces, until cooked through.
  4. Add the chicken broth, fish sauce, sriracha (to taste). Turn up the heat and bring to a boil, then turn down to simmer for about 6 minutes.
  5. While the soup simmers, soft cook the eggs.
    • start by filling a small pot with 1/2 inch of water. Turn the heat to medium-high and bring the water to a full boil. Quickly place cold eggs into the pot, add the lid, and immediately set a timer for 6 1/2 minutes. As soon as the timer rings, put pot into the sink and run cold water over the eggs for 30 seconds to stop the cooking.
  6. Once the soup has simmered, add the noodles and chard and cook until the noodles break apart and are tender.
  7. When the eggs are cooked and cool enough to handle, peel them and carefully cut in half.
  8. Ladle soup into bowls and top each one with 1 or 2 egg halves.
  9. To garnish sprinkle scallions on top and serve immediately.
  10. Enjoy!
